Lemon Blueberry Quinoa Oatmeal


Springtime is the best. After a long, cold winter spent indoors, as soon as the sunshine comes out and it warms up a bit, it seems like we cannot get enough of the beautiful outdoors! Brunch on the patio, dinner under the stars, a picnic lunch on the front lawn. Yes, our lives revolve around food.

Lemon and blueberry is definitely a big hit spring flavor combination!! We've noticed with the excitement surrounding our newest granola flavor, Main Squeeze. So, we've created a SUPER easy lemon and blueberry breakfast dish that's great for a long, slow morning at home or an oh-my-gosh-I-can't-get-out-the-door-fast-enough morning. If your mornings are crazy, combine everything in an on-the-go container the night before and grab it on your way out of the door.

This can be eaten warm or cold, although we prefer it warm.


Lemon Blueberry Quinoa Oatmeal
(serves one)

1 cup cooked quinoa
1 banana, mashed
2 tbsp lemon juice (freshly squeezed is best)
1.5 tbsp brown sugar
1/4 cup fresh blueberries
1/4 cup Main Squeeze granola 
optional: 1/4 cup walnuts

1. Combine the cooked quinoa, banana, lemon juice, and brown sugar. Heat over low heat (or microwave) until warmed through. Mix until all ingredients are combined.
2. Top with blueberries, granola, and walnuts (optional!).
3. Eat up while dreams of springtime fun dance in your head!
