Pineapple Upside Down Oatmeal | Healthy + Delicious


Am I the only one that craves cake (or brownies. or chocolate. or ice cream. or anything sweet) before 6am?!

I didn't think so.

But, starting your day with a slice of pie (although it sounds awesome) isn't the best recipe (ha! get it?) for a great, nutritious breakfast! And chances are, that ever wonderful sugar crash will you hit you right about the time you make it to work, rendering you, well, useless.

Fruits are my go-to sweet tooth fix. They're sweet and juicy. And on top on some warm, steamy oatmeal. Oh. My. Jam. Oatmeal is such a hearty breakfast that can be packed with so much nutritional goodness, from ground flax to chia seeds to protein-rich nut butters. So, I decided to sweeten it up a bit with some pineapple, organic brown sugar, and nutty granola, of course.

You don't have to wait until tomorrow morning. Oatmeal is the bomb at dinner, too.

Pineapple Upside Down Oatmeal
(serves 1)

1 cup water
1/2 cup rolled oats
2-3 tbsp brown sugar
1/4 tsp ground cinnamon
1/2 cup diced pineapple
1/4 cup An Apple a Day granola

1. Bring water to a boil and add oats. Cook until all water is absorbed and oats have become a soft "oatmeal"-like consistency. 
2. Remove from stoveup and pour into a bowl. Add brown sugar and cinnamon and mix well.
3. Top with pineapple and granola. 
4. Eat up, sunshine!
