Lemon Blueberry Quinoa Oatmeal


Springtime is the best. After a long, cold winter spent indoors, as soon as the sunshine comes out and it warms up a bit, it seems like we cannot get enough of the beautiful outdoors! Brunch on the patio, dinner under the stars, a picnic lunch on the front lawn. Yes, our lives revolve around food.

Lemon and blueberry is definitely a big hit spring flavor combination!! We've noticed with the excitement surrounding our newest granola flavor, Main Squeeze. So, we've created a SUPER easy lemon and blueberry breakfast dish that's great for a long, slow morning at home or an oh-my-gosh-I-can't-get-out-the-door-fast-enough morning. If your mornings are crazy, combine everything in an on-the-go container the night before and grab it on your way out of the door.

This can be eaten warm or cold, although we prefer it warm.


Lemon Blueberry Quinoa Oatmeal
(serves one)

1 cup cooked quinoa
1 banana, mashed
2 tbsp lemon juice (freshly squeezed is best)
1.5 tbsp brown sugar
1/4 cup fresh blueberries
1/4 cup Main Squeeze granola 
optional: 1/4 cup walnuts

1. Combine the cooked quinoa, banana, lemon juice, and brown sugar. Heat over low heat (or microwave) until warmed through. Mix until all ingredients are combined.
2. Top with blueberries, granola, and walnuts (optional!).
3. Eat up while dreams of springtime fun dance in your head!

Nola-fy Our Favorite Spring Dishes

Spring dinners and brunches with good friends are in full swing, and Easter is on it's way! So, we wanted to share some delicious recipes that can be jazzed up with a little granola! That granola sitting in your cupboard can be used for so many different, delicious dishes (hey, alliteration!)!! We know you love your morning yogurt + granola, but we're sure you're going to LOVE the granola even more when you incorporate it into some of these amazing recipes.

Our Goin' Nuts granola is one of the most common choices to incorporate into different recipes. You can, however, use Main Squeeze or An Apple a Day - just remove the dried fruit! If you're trying to steer clear of nuts (any nut-free guests?), be sure to use Main Squeeze. It's our nut-free granola. It's also a great choice to pair with any lemon-flavored dish.

How to Nola-fy: Sub pie crust for our delicious granola pie crust. All of the party kiddos (and kids at heart) will love you.

How to Nola-fy: When adding the reserved bacon before returning to the oven for an additional 5 minutes, add 1 cup of Goin' Nuts or An Apple a Day granola (dried apples removed). Oh. My. Yum.

How to Nola-fy: Sub Main Squeeze granola for pistachios. Or if you prefer to keep the pistachios, you can sub the granola for only half of the pistachios. The lemon flavor in the granola will complement the fresh lemon in the vinaigrette so nicely. Ya dig?

Our Favorite Nothin' but Nola Sweet Treats!!

With the weekend only one day away, we're already dreaming about the sweet treats we're going to be baking to share with friends! Weekends are the best for whipping up some delicious snacks and inviting over some friends for a game night. Or calling all of the kiddos into the kitchen after a long day of kids' sporting events (hello baseball tournament season!) to cook a pan of brownies or cookies (or both!)! This weekend, we've got you covered!! We're sharing our favorite sweet treats from the past few months. There's plenty of chocolate involved, so smiles and happiness are guaranteed!!



Freshly-squeezed lemon juice. Freshly-grated lemon zest. Sweet blueberries. We've recreated our granola, Main Squeeze in the form of a coffeecake. And it's that good. Don't think. Just go bake it. Now!



Have you ever drank a glass of summer? Your world is about to be rocked. Add a splash of citrus vodka or rum. Oh yeah, we just upped the ante!



Oats + Giant Chocolate Chips + Coconut Oil + Nothin' but Nola. You may want to make two batches. And hide one just for yourself.



Chewy, chocolatey pomegranate brownies. You can forgo the pomegranates and top with vanilla ice cream. I know. I dreamt of these last night. 



 Coconut Oil + Dark Chocolate + Granola. Your body will thank you. So will your neighbors! Try white chocolate for a summery touch. Cute.

Lemon Blueberry Coffeecake with Nothin' but Nola Granola


Sharing memories over a sweet morning treat are the sweetest, aren't they? Do you remember those summer mornings, waking to the smells of something delicious baking in the oven? They're some of the sweetest memories. So, we've created something sweet to help you make some sweet memories of your own.

Snuggle your sweet kids out of bed in the morning and let them help crack eggs, measure, and stir. They'll love it. Bake this sweet treat to share over brunch (and mimosas, yes please!) with your closest ladies. They'll love you! :) You can even share this as a light dessert after a sunshine-and-warm-weather-filled cookout ... under the twinkling lights in your backyard. However you choose to serve it, serve it with love and make precious memories over this sweet treat.


Lemon Blueberry Coffeecake with Nothin' but Nola Granola
(makes one full bundt cake, serves 12) 
  
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar
4 eggs
2 tbsp lemon juice, freshly squeezed
2 tbsp lemon zest, freshly grated
3 cups + 1 tbsp all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 5.3oz container plain Chobani greek yogurt
1 cup blueberries
1 cup Main Squeeze Nothin' but Nola granola 

1. Preheat oven to 350 degrees and coat your bundt pan with oil (a nonstick cooking spray works best). 
2. Cream butter and sugar until light and fluffy, about 3-4 minutes. 
3. Add eggs one at a time, beating and mixing well after each egg.  
4. Add lemon juice and zest, and stir well, until combined.
5. In a separate bowl, combine flour (3 cups), baking powder, baking soda, and salt. Use a whisk to mix well and get rid of any clumps. 
6. Add half of the flour mixture to the butter/sugar mixture. Mix well. Add the greek yogurt and mix until combined. Add the remaining flour mixture and mix until completely combined. Be sure to scrape down the sides of your bowl!
7. Toss the blueberries with the extra flour (1 tablespoon) -- this will help keep them from sinking to the bottom of your cake -- and gently fold into the batter, using a wooden spoon or rubber spatula. 
8. Spread 1/2 cup of granola in the bottom of your greased bundt pan. Top with the batter. Use the remaining 1/2 cup of granola to sprinkle across the top of the batter. Use a rubber spatula to press the granola into the batter. 
9. Bake at 350 degrees for 50-60 minutes.* Remove from the oven once a toothpick inserted, comes out clean. Let cool for 30-60 minutes. Invert the cake onto a serving platter and gently shake until the cake slides out of the bundt pan. Serve and enjoy! 

*You may need to cover the cake with foil for the last 10-15 minutes if it's starting to brown too much.

The Sweetest Blueberry Lemonade



Oh hey, it's almost spring!! We also just pre-launched our newest gem and granola flavor, Main Squeeze (yay)! So, we thought there was no better way to celebrate than with some deliciously sweet Blueberry Lemonade. You know, in celebration of Main Squeeze, our lemon and blueberry granola. Yeah!

This sweet concoction is sure to make your taste buds dance and bring on the spring fever! Hosting any brunches or spring parties in the next few weeks? You'll definitely want to add this to your menu!




The Sweetest Blueberry Lemonade
(makes one small pitcher)

1/4 cup sugar
1 cup blueberries
zest of 1 lemon
juice of 2 lemons (about 1/2 cup)
5 cups water

1. Combine 1 cup water with sugar, until dissolved. Add the blueberries and bring to a boil over medium high heat. Once boiling, turn down heat, and simmer for about 10 minutes.
2. Strain blueberries from liquid and let rest/cool for about 10 minutes.
3. Once cooled, mix together with 4 cups of cool water, and lemon juice.
4. Serve over ice and enjoy!

Meet Main Squeeze, our newest granola!



Are you as excited as we are?? If you've been following along with us on social media then you've had a sneak peek of all of the excitement! Our third granola flavor and newest gem, Main Squeeze, is going to be released March 20 (insert happy dance!!)! March 20th is the very first day of spring and well, we couldn't think of any better way to celebrate than with a bag bursting with flavors of spring! Mark your calendars!!

Some very lucky taste testers had the honor of being some of the first to try this new flavor! We are thrilled to say that this new flavor has been taking taste buds by storm!! We couldn't be happier!!! So, we wanted to share with you some of our favorite initial reacts...
